A Convex edge is the sharpest you can get on a scissor. This edge almost looks like a razor and is very fine. All convex edge shears will have a hone line ( a fine shiny line which can be seen in light on the inside edge), which gives the scissor it’s smooth cutting operation, without any blade noise. These are normally medium to high value scissors
A Bevel edge is an edge without a hone line as explained in the above description of Convex scissors. Since the hone line is not there, you will be able to hear the blades open and close. Some bevel edge scissors also have serration, which also has that familiar sound while in use.
